What is minhag Ashkenaz regarding this?
Is honey used on RH only? On Shabbos Shuva? Through Shemini Atzeres like the Polish Minhag?

The minhag in my father's house, which may have been Polin-ised, is that honey is used during all of Chodesh Tishrei, when available.

In Ashkenaz honey was used at the first day of Rosh Hashono, and some used it on the second day too. To dip the Challah in honey until Hoshano Rabbo is an Eastern European Minhag.
