In the Sefiroh there were no weddings, the hair was not cut, Shehecheyonu was not said, and no music was heard (including vocal music, although hearing vocal music for learning the nusach is OK).

The three weeks have the same restrictions as mentioned above, and all music is prohibited, including singing.

Does the Chasam Sofer say that one may shave every erev Shabbos? If so, was this accepted in Germany?

Rav Hamburger told me has is unaware of such a saying of the Chasam Sofer, and this was definitely not the minhog in Germany.

Are there any differences in terms of minhogim, in regard to the Bein HaMetzourim period?

I understand that Rabbi Yitzchok Tirna (who wrote a Sefer Minhogim on Minhag Poland) codified the halochous for this period. His opinion is followed by the Ramoh. What was (is) the Minhag Ashkenaz (Germany)?

1) Shehecheyonu?
2) Eating meat of chicken during the nine days?
3) Making a siyum in order to eat meat?
4) Listening to music (live music, recorded, radio, etc.)
5) Bathing vs swimming
6) Shaving vs haircuts

What was the minhog among Bnei Ashkenaz in regard to shaving ones beard during Bein HaMetzorim?

I understand that the Ramo holds that it's ossur from the 17th of Tammuz until 10 Av.

Did German Rabbonim disagree with the Ramo?

(It seems from the Maharil, that it is the week that Tisho B'Av falls when shaving is ossur.)

The Minhag in the three weeks was not to have a haircut or shave, not to swim (even if one did swim before the three weeks), not to say Shehecheyonu (although on Shabbos the Yosef Ometz says one can say, even on Shabbos ט באב), and not to hear music (as brought above regarding the Sefiroh).
And on the nine days no meat was eaten, including chicken meat.

Do you mean to say that the only greater stricture during the nine days is not eating meat?

Also, if there is no swimming during the whole three weeks, what about bathing? Is there a difference in regards to bathing during the three weeks vs. the nine days?

There is a difference also regarding bathing or showering and washing clothes and wearing them. All these are prohibited in the nine days only.
