It is my understanding that there are a wide variety of waiting times. What is the basis for the Yekkish custom of three hours?

The Gemoro (Chulin Daf קה) states that if you ate meat in one meal - you shouldn't eat milk until the next meal.
There is an argument between the meforshim if this means that you just should not eat meat and milk in the same meal, and therefore after you finished a meaty meal you can immediately start a milk meal, or that the Gemoro means you should eat only milk after a certain amount of time - the time that people used to wait between the meals (which was from the morning till midday).
According to the first explanation, one doesn't have to wait at all, and 3 hours would be a chumra that was accepted with the years, (but of course since it was accepted it is osur to wait less).
But it could be that the source of three hours was a way to follow partially the second opinion too: The Pri chodosh says that since in the winter they used to wait only a bit around 4 hours (in the winter the morning is much closer to midday), there is no need to wait more than that, even in the summer. According to that, R' Dovid Pardo (in the book Mizmor Ledovid) explains that this is the source for waiting three hours. (Of course what is written here is to explain the minhag of 3 hours, but those who wait 6 hours have to continue their minhag).
