In Sefer “Shemiras Shabbos K’hilchosa” (55:18 ), it says that one should not cut into any of the Lechem Mishnah before making Hamotzei as one is supposed to do during the week. Some are makpid to do so even on Shabbos. A person should make the mark in a spot that he will be able to cut from there and give to all of the people sitting with him. This is intended to make the least hefsek as possible from the time he makes the Bracha until he eats. Now my family, and my Rebbe (who is also a Yekke) – we make a small mark at the end of the Challah and cut that piece off (and leave it to bench on). We then cut the remainder of the Challah for all of those eating (from the end, not the middle). This is certainly an extra hefsek…What is the Minhag?

Rav Hamburger told me that the Poskim bring that one should mark the place he is going to cut and give out, but he didn't know of a Minhag to cut off the end. He said those who cut the end may have been afraid that the end is Koshe Leshik'cho.
