What is the general Yekke minhag re waiting after consuming milk to eat meat? Technically speaking, according to basic halacha, I believe that one need not wait. Dayan Grunfeld cites a shita of a 1/4 hour. Zohar says 1 hour. R' Binyomin Forst in his sefer says that some people wait 1/2 hour and that this is the same as the Zohar but more maikil.

The common Minhag does not require any specific amount of time between milk and meat, just קינוח והדחה, as mentioned in Shulchan Oruch (או"ח סימן תצ"ד), and Mishna Bruroh there. (But there is a point to mention that in Minhogei Antwerp the Minhag of half an hour is mentioned, and on the other hand the Yosef Ometz personally waited six! hours after milk).
