What is the correct way, according to the German minhag, to wrap one's self in a tallis, when putting it on and making the bracha? Do you grab the ends with each hand and bring them to the center, covering yourself, or do you wrap it around your head and grab the ends, throwing it over your left shoulder? Or is it done some other way?

The Tallis should cover one's chin until his eyes (under the eyes), and shouldn't cover the eyes, unlike Nusach Polin that one covers from above until under the eye.

Besides that, there were many different ways it was done. Some threw the Tallis over the right side (according to the Rishonim), and some over the left side (according to the Mekubolim, that the right should be above the left), some throw only one side (which means - according to the Rishonim one would throw the left side behind only, and according to the Mekubolim one would throw the right side only), and some throw both sides of the Tallis behind.

And the minhag in Germany was like the rishonim.....right side only? what's the minhag in KAYJ?

To be more precise, the Rishonim don't say to put the Tallis on the right, but they generally did not specify on which side one should throw the Tallis, and they didn't have Kpeida to do so on the left. There is one manuscript of a Rishon that even says to do so on the right. But in Germany the Minhag was to do so on the left, as the Acharonim wrote specifically (according to Kabolloh), and this is the Minhag at KAYJ too.

As I davened in Breuer's this past H"R I noticed that the Chazzan had his talis draped over his head for Atifas Ha'talis and with the talis draped, he brought the right side to the left side while it was just hanging. He then had the top right end of the talis quickly wrapped over his left shoulder. It was like wrapping oneself in a blanket vs what we often see where the talis is folded up in the back, brought over the shoulders and then the head is essentially wrapped.
