With Purim coming up, I'd like to ask about German Purim minhagim. Are there any German Purim customs that differ from those of Eastern Europe? I am aware of not saying shecheyanu during the day and making noise after Zeresh's name in the megillah; are there any others?
I have heard that some German communities used to have the seudah early in the day the way others do only on Friday, is this true? Does anyone still do this? Are there any particular German food customs for Purim other than the usual hamentaschen?

Alsatian custom was to eat Purim Kichlich, a form of sufganiya, presumably instead of hamentaschen.

My grandmother mentioned eating Purim krapfkin, which were jelly donuts, but apparently her family ate these in addition to hamentaschen, not instead of.

Rav Hamburger mentioned to me the following minhogim for Purim food:

One of the minhogim, is to bake something that looks like a man, call it Haman, and hang it until it is eaten.

In Teshuvos Yefe Nof (about 400 years ago) he brings the minhag to eat kraeplach and cakes.

The Chavos Yoir (about 350 years ago) talks about Nogget (sweets with almonds) and crispy cookies.

Maso Umerivoh (400 years ago) says one would eat a fat Haman (fat meat), and this was the minhag in Alsace until the Holocaust.
Some ate Turkey. Some ate lean meat. Some ate Pueremkischlisch, which is a baked good like a plate.

Rabbi Hamburger, in his yearly Minhag booklet, also mentions the Minhag to eat smoked sausage and call it Haman on Purim because it is hung when it is smoked. One is also supposed to hang it up until the time it is eaten. I can assure you the children and all assembled enjoyed it when I slaughtered both the loaf and the sausage last Purim.

This morning, Rabbi Hamburger sent me the following in response to this query:

J. J. Schudt, - E. Frisch, Von der Franckfurter Juden Vergangenkceit, Berlin 1934, s. 64: "[תע"ד]. יהודי פראנקפורט שלנו מתענים ביום הראשון של פורים [תענית אסתר], ובשני הם אוכלים משהו בבוקר, אחר הצהריים רק אחרי השעה 3, מתחילה הזלילה והסביאה".

נוהג כצאן יוסף, עמ' ר"ג-ר"ד: "ז"ל של"ה, וכל מי שמקדים ומזרז ביותר לעשות הסעודה בהשכמה, הוא משובח בעיני, וכ"כ מהר"ר איסרלן שהוא ורבותיו נהגו בכל השנים עיקר הסעודה שחרית... עכ"ל... ודלא כש"ע שפסק... שצ"ל אחר המנחה. אמנם יש לומר דאלו ואלו דברי אלהים חיים, שצריך להתחיל קודם מנחה, ולהתענג ולפנק עד אחר תפלת מנחה ומעריב, אכן שומר נפשו ירחק שלא ישתכר קודם זמן מנחה... והואיל ומצוה להתחיל קודם תפלת מנחה, ראוי שיתחיל קודם זמן מנחה, דכשהגיע זמן מנחה אסור לו לישב בסעודה עד שיתפלל. וקודם התפלות יאכל וישתה קמעא קמעא וידבר דברי תורה... ואחר התפלות יאכל וישתה כפי אות נפשו, אבל לא לאות גופו... ויראו שלא יתבטל התמיד בבה"כ. דהיינו בישובים שיש בהם מנין עשרה בצמצום ילכו הכל לבה"כ, ובקהלות, אם רוצה להשאר בביתו יתפלל עכ"פ בשעה שהצבור מתפללין, וא"צ לברך ברכת המזון קודם התפלה, כמ"ש... רמ"א בא"ח סי' קע"ח, אכן יניח מקצת חברים להסיב בשלחן".

כ"י כח יהודא (בינגא). – מובא: לייטנר, מנהגי פ"פ, עמ' קיג: "לא יהיה מתחיל סמוך לזמן של תפילות מנחה הסעודת פורים ומשלוח מנות, ועי"כ עיקר הסעודה ממשכת בליל ט"ו, זה אינו נכון, הם עושין העיקור לטפל. ובזמן מנחה דופק השמש לב"ה כנהוג, ומתפללין מנחה עם על הניסים, ומעריב בלא על הניסים. וקצת נוהגין לברך ברכת המזון קודם הליכות בה"כ למנחה על הסעודה, ואח"כ בלילה חוזר ונוטל ידיו לסעודה. ובברכת המזון אח"כ אין לברך על הנסים בבה"מ, באשר שכבר הפסיק במעריב מן לומר על הניסים. וקצת נוהגין שנשאר מן בעלי הסעודה א' על השלחן בלי בהמ"ז ובלי תפלת ערבית, ואז אותו א' המיוחד לכך הוא המברך בהמ"ז עם על הניסים בסוף סעודת הלילה, ואח"כ מתפלל מעריב בלי על הניסים. רק שיש קלי דעת שעי"כ באו לידי שכחה של תפילת מעריב, לפעמים ע"י שתיה יין יותר מן המדה וע"י המשכת הסעודה. והבוחר יבחר בטוב לב לשמים לבא בעי, אבל טוב לב משתה תמיד".

ר"ש סופר, חוט המשולש, ת"א תשכ"ג, עמ' קמג: "שמחת תורה... קודם סעודת צהרים [החת"ס] התפלל מנחה, וכן בפורים קודם הסעודה, כי המה בכלל סעודה גדולה". שם, עמ' קמה: "בליל שני [של פורים] באו נכבדי וחכמי העיר שנית [אל בית החת"ס], והוא הקדים ואכל עיקר סעודתו ביום".

ר"ה שייאר, תורי זהב – ר"ש בונדי, שקל הקדש, מגנצא תר"ל, עמ' רנ"ז: "נראה לי הטעם על מנהג רוב העולם לעשות סעודת פורים לאחר שמתפללים מנחה בעוד היום גדול ולחבר לזה הלילה, וכמו שכתב הרמ"א בש"ע א"ח תרצ"ה... ביום כנגד תורה שבכתב ולחבר לו הלילה כנגד תורה שבע"פ...".

The summary of the sources MPerlman posted is that there is a preference to eat early in the day, but that wasn't necessarily the Minhag practiced.
